Confused by the vast array of classic sauce options? Feeling ready to take your sauce-making skills up a level? Then this class is for you! By the time Laura Pyles is through with you, you’ll have the concepts and the techniques you need to make modern versions of classical sauces, as well as how to create your own! You’ll learn the basic skills that form the backbone of sauce making: clarifying butter, building hot and cold emulsions, thickening sauces, balancing your finished creations, and pairing with other flavors. You’ll put your new skills to work as you make sticky chicken wings with blackberry tarragon gastrique; pan-roasted brussels sprouts with fish sauce vinaigrette; crispy potatoes with bearnaise and harissa; bucatini with classic vodka sauce and herb oil; white bordelaise sauce; and drop doughnuts with popcorn anglaise.

While our event purchases are nonrefundable, we are generally happy to give a credit for a future event when we can fill your spot. If you need to cancel, we will reach out to the waitlist. If we get any takers, we can then issue you a credit. The chances of finding a replacement are higher with as much advance notice as possible, so please let us know as soon as possible if you need to cancel.
